Mac and Cheese is a classic recipe that almost everyone loves but let’s face it, it can be very unhealthy and definitely bad for losing weight! Well, this version is not only healthier but it’s also ok to eat on a keto or low carb diet. This mac-n-cheese recipe, using hearts of palm pasta to make it, is low FODMAP, and keto-friendly. If you have IBS I recommend that you still use FODZYME to ensure all FODMAP’s are kept low by breaking down any lactose that is in the cheese. Let’s get into it!
Ingredients:
– 2 cans (14 ounces each) of hearts of palm pasta, drained and rinsed
– 1 cup of grated cheddar cheese (aged cheeses are typically low in lactose)
– 1/2 cup of grated Parmesan cheese (also low in lactose)
– 1 cup of almond milk (unsweetened and lactose-free)
– 1/4 cup of cream cheese (choose varieties that are low in lactose)
– 1/4 cup of whey protein isolate (for added protein; ensure it is low FODMAP)
– 2 tbsp of olive oil or garlic-infused oil (for flavor; avoid if sensitive to garlic even in infused forms)
– 1 tbsp of Dijon mustard
– Salt and pepper to taste
– Optional: 1/2 teaspoon of turmeric for color
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Prepare the hearts of palm pasta according to the package instructions, usually just a quick rinse and drain.
3. In a saucepan, warm the almond milk over medium heat. Whisk in the cream cheese until smooth.
4. Gradually stir in the cheddar and Parmesan cheeses until they are melted and the sauce is creamy.
5. Mix in the whey protein isolate thoroughly to avoid lumps.
6. Add the Dijon mustard, salt, pepper, and optional turmeric, stirring until well combined.
7. In a large mixing bowl, toss the hearts of palm pasta with the cheese sauce until each strand is nicely coated.
8. Transfer the mixture into a greased baking dish.
9. Bake for 20-25 minutes, or until the top becomes golden and the sauce is bubbly.
10. Let it cool for a few minutes before serving to allow the sauce to thicken up and add some chives to the top for a great presentation and added flavor.
