In a large skillet heat up coconut oil and brown your meat over medium heat. Cook for 5-10 minutes depending on if the meat has been precooked already.
Once your meat is almost finished browning, add your veggies toss to coat with fats. Lower the heat to medium-low and cover skillet so greens steam cook for 3-5 minutes
Once greens are steamed and soft, add the whisked eggs and scramble until eggs are fully cooked.
Garnish with chopped scallions and add salt and pepper to taste and serve with fruit of your choosing!
